In early 2025, MK Hospitality worked with a busy café experiencing strong footfall but facing pressure on both margins and customer wait times. The challenge was to optimise performance, and margins without compromising the café’s well established brand identity or high service standards.
We carried out in depth analysis of the café’s order flow, customer behaviour, and transaction patterns, identifying key bottlenecks and inefficiencies. A detailed review of menu pricing and portion and recipe control allowed us to refine value perception while protecting margins. Paired with operational adjustments, these strategic changes delivered immediate and measurable improvements. The outcome included a 36% reduction in average wait time, a 17% increase in daily transaction count, and a 4.7% uplift in gross margins.
