MK Hospitality was engaged by a multi-outlet estate hotel in Ireland to carry out a transaction compliance audit across its restaurant and bar and its cocktail bar, alongside a six-month void, comp and discount audit across both outlets' EPoS systems.

The work combined covert observational visits: recording live transactions in real time with reconciliation against POS records, plus a full six-month review of void, comp and discount activity by outlet, by staff member and by time period to surface patterns and anomalies.

The audit surfaced real procedural breaches across all areas reviewed. MK Hospitality presented the findings as factual data rather than judgement calls, and worked with management directly on tackling the gaps identified and reviewing the processes behind them.
